Zucchini Orange Bread

If you have never tried Zucchini Orange Bread, you are missing out! It is one of the best recipes that I have made so far. The fragrant orange combined with clove and cinnamon is a heartwarming combination.

This bread is super moist due to the zucchini and will go perfectly with a lovely cup of black tea or coffee, in the afternoon.

The recipe in itself is easy and will give you two fabulous loaves, one to keep for yourself and one to perhaps give to a friend. You can also make muffins out of it. Why not give it a go?

HOW TO MAKE ZUCCHINI ORANGE BREAD FROM SCRATCH?

To make Zucchini Orange Bread, you just need to follow these steps:

First, preheat the oven to 350°F. Then, grease and flour two 8×4 or 9×5 loaf pans and set aside. In a bowl, mix the remaining dry ingredients, including the orange rind, and set aside.

Now, in a large bowl, beat the eggs until it becomes light-colored, add the sugar bit by bit while beating it, and then add oil, orange juice, and zucchini and mix well.

Pour in the flour mixture and stir until all ingredients are well combined. In the prepared bread pans, pour the batter, half of it in each pan.

Place the pans in the oven and let them bake for 40 to 50 minutes. To make sure it is cooked through by inserting a wooden stick in the middle, it comes out clean, which means it is ready. Let it cool for around 10 minutes before removing it from the pans.

Let them cool a little further while you prepare the glazing by mixing all the ingredients in a small bowl, if you wish, you can add a bit of orange zest too.

While the loaves are still warm, spread the glaze over it then let it cool on a wire rack before serving.

HOW DO YOU KEEP ZUCCHINI BREAD FROM GETTING SOGGY?

To prevent the Zucchini Orange Bread from getting soggy, you must measure the ingredients according to the recipe; sometimes, when we feel confident, we tend to change a few things believing that it won’t affect the results, with this recipe, I can guarantee that if you measure everything well, it will be perfect.

Also, make sure to let it cook well in the oven, if you remove it too early, it will be soggy too.

HOW TO STORE ZUCCHINI ORANGE BREAD

Make sure to wrap it well and keep it refrigerated, due to the nature of its ingredients, it can easily go off.

You can wrap it in Saran wrap or keep it in a sealed container for up to 6 days in the fridge.

It can also be frozen for up to 4 months. To defrost it, leave it at room temperature for at least 6 hours before consuming it.

  • 4 eggs
  • 1 1⁄2 cups sugar
  • 3⁄4 cup oil
  • 2⁄3 cup orange juice
  • 2 cups shredded unpeeled zucchini
  • 3 1⁄4cups all-purpose flour
  • 1 1⁄2teaspoons baking powder
  • 1 1⁄2teaspoons baking soda 
  • 1 teaspoon salt
  • 2 teaspoons grated orange rind
  • 2  1⁄2teaspoons cinnamon 
  • 1⁄2 teaspoon clove 
  • 1⁄2 cup chopped nuts (optional)

GLAZE

  • 1 cup powdered sugar 
  • 2 -3tablespoons orange juice
  • ½ teaspoon orange zest. (optional)
