One Pot Black Pepper Chicken

This recipe is super delicious because it has that sweet and sour touch with the extra black pepper that makes it even more flavourful. 

It is the exact kind of dish that can easily be prepared in less than one hour; it’s filling and full of flavour but not strong enough to put off the little ones.

My family loved it the first time I made it and the pan ended up empty. I like to serve it with white rice on the side and a salad. So perfect! It will become a favorite in your house for sure!

ONE POT BLACK PEPPER CHICKEN INGREDIENTS

To make One-Pot Black Pepper Chicken you won’t need much, probably most of the ingredients you already have in your pantry. To start you need; olive oil, fresh ginger root, peeled and finely chopped and cloves garlic peeled and finely minced.

Then you will need boneless, skinless chicken breasts, cut into cubes.

To marinate your chicken you will need light soy sauce, coconut palm sugar or honey, and freshly ground black pepper. For the sweetness and crunchiness you will need, one red bell pepper, seeded and cut into strips.

HOW TO MAKE ONE POT BLACK PEPPER CHICKEN FROM SCRATCH?

This is why I like this recipe so much; it’s so easy and quick!

First, put the following ingredients in a medium bowl and mix with a whisk: sweetener, half of the vinegar, half of the soy sauce. Add the chicken and toss to coat. Put into the fridge so as to steep for half an hour. Add oil to a frying pan and heat to medium-low.

Then, add garlic and ginger and cook it for 30 seconds until garlic gets fragrant and golden without being burnt. Cook the marinated chicken for 3 minutes without any juices in the bowl. Then, pour the remaining soy sauce and vinegar, add the bell pepper strips, the black pepper, and stir.

To finish, cook for 10 minutes until chicken is cooked through and peppers get softened. Remit chicken over or alongside white or brown rice.

TIPS
1. If you want to make this simple dish even more special, you can add one tablespoon of flour and mix it into the marinated chicken while in the bowl. It will create a thicker sauce once it is cooked, the more flour you add the thicker the sauce will be.
2. Just do not put too much otherwise you will have to add some water to thin the sauce.
3. Also, add one onion cut into strips, together with the garlic and ginger; even scallions at the end will not just add flavor but a bit of color too.
