WHAT MAKES THIS CAKE SO MOIST

It’s thanks to the buttermilk that I used in this recipe. If you don’t have it on hand you can make it at home. I made it for myself also by combining 1 cup of milk with 1 tbsp lemon juice.

I put this in the microwave for 30 seconds and set it aside for another 10 minutes. There you have it. Fresh and ready to use.

HOW DO YOU MAKE BLACK MAGIC CAKE?

  1. First, you need to combine the dry ingredients in a large bowl.
  2. Then, add the eggs and the wet ingredients to this mixture. Mix them together until you get a smooth batter. Pour the batter into a baking pan, lined with parchment paper. Bake it in the preheated oven at 350 F/ 180 C for 35 minutes.
  3. Let it cool completely.

Instructions for the frosting;

  1. Combine all the ingredients and mix with a hand or stand mixer.
  2. Spread it on the cooled cake. Let it rest in the fridge for 30 minutes before cutting.

WHY IS MY FROSTING RUNNY?

To prevent it you should use soft butter, not melted. You can put the frosting in the fridge before spreading it on the cake to reach a thicker consistency.

Let’s talk about freezing magic cake! Obviously without the frosting. Before using the cake just defrost it in the fridge, then you can add the toppings.

TIPS
1. You can use less sugar in the recipe if you prefer the desserts not as sweet.
2. To make the frosting taste richer you can add 1 shot of espresso to it
3. Let the cake cool completely before spreading the frosting on top, otherwise, it will melt.

  • ¾ cup cocoa powder 
  • 2 tsp baking soda
  • 1 tsp salt

  • 1 cup black coffee
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 tsp vanilla extract 

For the frosting

  • ½ cup margarine 
  • 2 oz melted dark chocolate 
  • 3 cups powdered sugar (I used only 2 cups) 
  • 3 tbsp milk 
  • 2 tsp vanilla extract
